Saskatoon Banana Bread

It won’t be long until we’ll be trying to beat the bears to as many Saskatoons as we can get our hands on! In the meantime, I’m trying to use up the last of the Saskatoons that I picked in previous years so that there’s more room in the freezer. Hard to go wrong with a loaf of Saskatoon banana bread!

Ingredients

2 cups flour

1 tsp baking soda

1 tsp kosher salt

1/2 cup butter

3/4 cup brown sugar

2 eggs

2 1/4 cups mashed ripe bananas

1 cup frozen Saskatoons, thawed and excess liquid drained

How To Make Saskatoon Banana Bread

Combine flour, baking soda and salt in a large bowl. In a separate bowl, cream together the butter and brown sugar. Add two eggs and beat until mixture is creamy. Stir in the bananas and Saskatoons, then fold everything into the dry ingredients.

 

Pour the batter into a parchment paper-lined loaf pan. Bake in a preheated oven at 350 degrees Fahrenheit for one hour. Remove from oven and allow to rest in the pan for around 10 minutes before removing to a wire rack and allowing to cool completely before cutting.
