Morel-Stuffed Moose Burgers

Homemade burgers are one of my go-to summer meals, and these morel-stuffed moose burgers are no exception. Don’t skip the step of precooking the morels prior to stuffing, as they must be thoroughly cooked before being consumed.

Ingredients

1 lb ground moose, liberally seasoned with salt and pepper

1/4 cup finely grated cheese (Swiss, mozzarella, etc.)

1 cup fresh morels, finely chopped

Half of a white onion, minced

3 tbsp oil

1/2 tsp paprika

1 tsp thyme

How To Make Morel-Stuffed Moose Burgers

Preheat oil in a cast iron pan over medium heat. Sauté the herbs and spices, minced onion and chopped morels until cooked thoroughly and softened, around 10 minutes.

 

Form the burgers by pressing them firmly together by hand – split the meat into four quarter-pound portions. Scoop out a little bit of meat from the middle of each burger and fill with the morel mixture. Sprinkle a little bit of grated cheese on top before covering with the meat that was previously scooped out.

 

Fry the burgers in a cast iron pan until cooked through – cooking times may vary depending on how thick you have made the burgers.
