3/4 cup panko breadcrumbs

3/4 cup shredded coconut

Oil for frying

Dipping sauce of choice

How To Make Coconut Crusted Halibut Bites

Remove the skin from one halibut fillet. Slice the fish into bite-sized pieces. Combine the flour, salt and pepper together in a bowl, beat the eggs together in a second bowl, and finally mix together the breadcrumbs and the shredded coconut in a third bowl. To coat each piece of halibut, cover in flour mixture, dip in beaten egg and cover in a thick layer of breadcrumbs and coconut.

To fry the halibut bites, heat up a couple inches of oil in a deep pot on the stove. Put the coated halibut bites into the oil and cook until lightly browned, and then flip to cook the other side until browned. Remove from oil and serve with a dipping sauce of your choice.
