Tacos for dinner is one of my go-to meals when we are stretched for time in the evenings – and while I grew up on just plain old ground meat tacos, I now love using whatever meat we have on hand. One deer heart was enough for two people to have tacos for dinner, plus a little bit of a leftovers for lunch!

1 deer heart
Taco shells

1 tablespoon paprika
1 tablespoon ground white pepper (can be substituted with black pepper)
3/4 tablespoon coarse salt
2 tablespoons fresh oregano, chopped
2 tablespoons fresh thyme
1 teaspoon brown sugar
1/2 teaspoon cayenne pepper powder
2 tablespoons oil for frying
Your favourite taco toppings, such as fried morels, bell peppers, onions, fresh salsa and sour cream.
How To Make Deer Heart Tacos
Trim all the hard white bits off a rinsed heart and remove all the heartstrings from inside it. Slice the cleaned heart into thin pieces.
In a large bowl, combine the spices, fresh herbs and sugar in a bowl. Toss the heart slices with the seasoning until coated thoroughly.
In a skillet on the stovetop over medium heat, heat a couple tablespoons of oil. Fry the seasoned deer heart until cooked medium rare (about five to seven minutes). Remove from the heart from the pan and set aside. Fry any additional toppings (morels, onions and bell peppers are favourites around here) and then remove the pan from heat.
Fill taco shells with your favourite toppings and enjoy!
